Creamy potato soup with coriander and mint

Ingredients

  • 750 g organic potatoes
  • 2 organic onions
  • 2 cloves organic garlic
  • 3 tbsp olive oil
  • 300 ml Provamel Soya Drink Unsweetened plus Calcium and Vitamins
  • 500 ml organic vegetable stock
  • 1 bunch mint
  • 1 bunch coriander
  • 4 slices organic wholemeal toast
  • 40 g pine nuts
  • 200 g frozen organic peas
  • 250 ml Provamel Soya Organic Single Altenative to Cream

  1. Wash, peel and dice the potatoes. Peel and chop the onions and garlic.
  2. Heat one tablespoon of oil. Sweat the onions and half the garlic in the oil.
  3. Add the potatoes and cook for a few minutes. Add the Provamel Organic Soya Drink and vegetable broth, cover and cook for an addiitonal 15 minutes.
  4. In the meantime, wash and chop the herbs and cut the toast into cubes.
  5. Heat the rest of the olive oil in a non-stick pan. Fry the garlic, toast cubes and pine nuts until golden brown.
  6. Once you've pureed the soup you can add the peas and Provamel Soya Organic Single Alternative to Cream.
  7. Simmer for 2-3 minutes. Garnish with the herbs and serve in bowls. Top off with the croutons and pine nuts and serve.

Also delicious when served with seasoned smashed avocado.
