Warm summer fruit

  • 500 ml Provamel Soya-Coconut alternative to yogurt
  • 3 tbsp olive oil
  • 600 g summer fruit (peaches, plums, blueberries, raspberries, blackberries, strawberries, apricots, … )
  • 1 twig of rosemary
  • 3 tbsp seeds (chia, sesame, sunflower pits, pumpkin pits,… )
  • 2 tbsp coarsely chopped pistachio nuts (unsalted)
  • 2 tbsp goji berries
  • Black pepper

  1. Cut the largest pieces of fruit in chunks. Heat a non-stick skillet and add some oil. Once heated, add the fruit and the rosemary. Let it simmer for 2 mins. Season with black pepper.
  2. Divide the fruit over some plates, ladle in the Provamel Soya-Coconut alternative to yogurt and sprinkle with the seeds, goji berries and pistachio nuts.
