Nut and raisin cookies

  • 100 g plant-based margarine
  • 100 g spelt flour
  • 20 g soy flour
  • 1/2 tsp. baking powder
  • 140 ml Provamel Soya Drink Unsweetened
  • 70 g raisins or sultanas
  • 70 g hazelnuts, coarsely chopped

  1. Pour boiling water over the raisins and let soak for five minutes. Drain the water.
  2. Preheat the oven to 200 °C and line a baking sheet with baking paper.
  3. Mix all ingredients except the hazelnuts and raisins with an electric mixer. Then fold in the raisins and hazelnuts.
  4. Place tablespoon-sized drops of the dough on the baking sheet, leaving a bit of space between each drop, and bake in the preheated oven on the middle rack and top/bottom heat for about 12 minutes.
  5. Serve warm or cold.
